To avoid clogged drains and grease traps, it is essential that your kitchen staff implement the following practices:

  • Dry wipe pots, pans, and dishware prior to dishwashing to reduce the amount of fats, oils, and grease (FOG) entering the drain.
  • Dispose of food waste by recycling and/or solid waste removal.
  • Properly dispose of waste cooking oil.
  • Cover outdoor grease and oil storage containers to prevent polluting local bodies of water.
  • Do not pour grease down sinks or into toilets, as it can congeal and cause backups.
  • Avoid or limit the use of garbage disposals. While garbage disposals grind waste into tiny particles, over time these particles can cause clogs and backups.
  • Clean grease traps with a capacity of 100 gallons or less at least weekly.
