Grease Trap Basics: What Is It, Why Do I Need One, and Why Clean It?

What Is a Grease Trap?

A grease trap is a unit that wastewater flows through before entering the sewer system. When grease and water flow through the grease trap, the grease rises to the surface and is trapped in a series of plastic walls called baffles. The grease fills the trap from top down, and clean water exits the bottom of the trap into the sewer lines.

Why Do I Need a Grease Trap?

Grease containing animal fats (e.g., bacon grease) cools and solidifies at normal temperatures inside of pipes. Over time, solidified grease and food particles can lead to a blockage in sewer pipes, causing backups and sanitary sewer overflows. These overflows can be dangerous, costly, and time-consuming to remedy, and often result in fines and health code violations. Indiana state law mandates that all food service and food processing facilities install appropriately sized grease traps to prevent these backups from occurring.

Why Do I Need to Clean My Grease Trap?

Over time, grease accumulates on the walls and baffles of the grease trap, filling it from the top down. To prevent clogs and backed up sinks, we recommend cleaning your grease trap at least once every three months.
